HACCP
Hazard Analysis Critical Control Point (HACCP) is a pro-active management system designed to control food safety hazards. The systematic approach ensures an assessment is made at each step of food production therefore allowing businesses to identify process steps which are critical to food safety (e.g. cooking, cooling, reheating etc).
Once potential hazards have been highlighted, appropriate controls and monitoring procedures can be implemented to ensure hazards remain under control.
Food Hygiene Regulations
All food premises are required to put in place procedures (based upon the HACCP principles) to manage food safety.
Penarth Management has the resources and expertise to assist. We can help your business identify food safety hazards and provide you with the procedures and training to ensure you have hazards under control.
BRC Global Standard
The British Retail Consortium Food Standard represents the bench mark in food safety management - and is widely recognised by the NHS, major UK retailers and global industries.
Penarth Management has experienced consultants who can assist both small and large food manufacturers achieve the requirements of the revised BRC Standard. We can assist by:
- Conducting a 'pre-audit' to establish any improvements required to meet the new Standard.
- Developing a quality system, or reviewing your existing system in line with the Standard.
- Developing or reviewing an HACCP Plan.
- Providing guidance in developing procedures and records required by the new Standard.
- Providing HACCP and procedure training to all key personnel.
- Providing technical support throughout the implementation of the Standard.
HACCP Training
We provide a one day course designed for food handlers who require a basic level of knowledge and understanding of HACCP.
During the course, candidates will learn the benefits of HACCP, its origins and its role within a food business. Successful candidates will be awarded the Foundation Certificate in HACCP Principles (approved by the Royal Society for Public Health).
